PEMBUATAN ETANOL DARI NIRA NIPAH ( Nypa fruticans Wurmb) DENGAN PROSES FERMENTASI

ABSTRAK Telah dilakukan penelitian tentang pembuatan etanol dari nira nipah (Nypa fruticans Wurm) dengan proses fermentasi. Penelitian ini bertujuan untuk mengetahui bahwa etanol dapat dihasilkan dari nira nipah (Nypa fruticans Wurmb) dan mengetahui jumlah ragi yang dapat menghasilkan etanol yang optimum. Dalam penelitian ini metode yang digunakan adalah metode fermentasi dengan menggunakan ragi (Saccharomyces cerevisiae). Penetapan jumlah etanol yang dihasilkan dihitung dengan metode penyulingan yang dilakukan dengan cara menimbang bobot jenis etanol yang dihasilkan menggunakan piknometer. Hasil penelitian ini menujukkan etanol dapat dihasilkan dari nira nipah sebannyak 5% sampai 6% sehingga jumlah ragi yang digunakan tidak berpengaruh signifikan. Kata kunci: Etanol, Nira nipah, Fermentasi, Saccharomyces cerevisiae ABSTRACT It had been conducted a study on the making ethanol from nypa sap (Nypa frutican Wurmb) with fermentation process. This study aimed determine the amount of ethanol produced from nypa sap and to the amount of yeast that cauld produce the optimum ethanol. In this fermentation using yeast (Saccharomyces cerevisiae). To determine the amount of ethanol produced was carried out by weighing the gravity of ethanol destlilled using piknometer. The result of this study showed that ethanol could be produced from the nypa sap in the amount of 5 to 6% without significantly influence by the amoun of yeast used.
