ANALISIS SIKLAMAT PADA AGAR-AGAR YANG BEREDAR DI PASAR WAGE PURWOKERTO DENGAN METODE KROMATOGRAFI CAIR KINERJA TINGGI

Telah dilakukan penetapan kadar siklamat dalam makanan kemasan metode kromatografi cair kinerja tinggi (KCKT). Sampel yang digunakan adalah agar-agar yang beredar di Pasar Wage Purwokerto. KCKT yang digunakan adalah fase terbalik dengan fase diam kolom shimpack octadesylsilane (ODS) dan fase gerak metanol:air (30:70) dengan kecepatan alir 1 mL/menit. Detektor yang digunakan adalah detektor UV dengan panjang gelombang pengukuran 220 nm. Penentuan linierita pada kurva kalibrasi menunjukkan hubungan yang linier antara luas area dengan konsentrasi siklamat. Persamaan kurva kalibrasi adalah y = 0,959 x + 0,003 (r=0,999). Nilai limit of detection (LOD) dan limit of quantitation (LOQ) berturut-turut sebesar 6,5 x 10-3 dan 0,022 mg/mL. Hasil uji presisi menunjukkan metode memiliki presisi yang baik dengan nilai relative standard deviation (RSD) sebesar 0,31%, namun ketepatan metode kurang memenuhi persyaratan. Berdasarkan hasil penetapan kadar, diperoleh bahwa kadar rata-rata siklamat dalam sampel agar-agar diperoleh sebesar 1,99 mg/mL. Kata kunci: siklamat, KCKT, pemanis buatanReferences
